Vegan Recipe: Aubergine and Tofu

Vegan recipes can be both tasty and nutritious. Aubergine and tofu is a great combination that is both vegan-friendly and full of flavour. Here is a simple vegan recipe to get you started.

Ingredients

  • 1 Aubergine
  • 1 Pack of Firm Tofu
  • 1 Red Onion
  • 1 Clove of Garlic
  • 1 Tablespoon of Olive Oil
  • 2 Tablespoons of Soy Sauce
  • 1 Teaspoon of Honey
  • 1 Teaspoon of Sesame Oil
  • Salt and Pepper to Taste

Instructions

  • Preheat oven to 200°C.
  • Cut aubergine into cubes and place on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  • Bake for 20 minutes until aubergine is soft and golden brown.
  • Meanwhile, prepare the tofu. Drain the tofu and cut into cubes. Heat a pan over medium heat and add the tofu. Fry for 5-6 minutes until golden brown.
  • In the same pan, add the onion and garlic and fry for 3-4 minutes until softened.
  • Add the aubergine, soy sauce, honey, and sesame oil to the pan and mix until everything is combined.
  • Serve with rice or quinoa and enjoy!
