Vegan Recipe: Aubergine and Tofu
Vegan recipes can be both tasty and nutritious. Aubergine and tofu is a great combination that is both vegan-friendly and full of flavour. Here is a simple vegan recipe to get you started.
Ingredients
- 1 Aubergine
- 1 Pack of Firm Tofu
- 1 Red Onion
- 1 Clove of Garlic
- 1 Tablespoon of Olive Oil
- 2 Tablespoons of Soy Sauce
- 1 Teaspoon of Honey
- 1 Teaspoon of Sesame Oil
- Salt and Pepper to Taste
Instructions
- Preheat oven to 200°C.
- Cut aubergine into cubes and place on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Bake for 20 minutes until aubergine is soft and golden brown.
- Meanwhile, prepare the tofu. Drain the tofu and cut into cubes. Heat a pan over medium heat and add the tofu. Fry for 5-6 minutes until golden brown.
- In the same pan, add the onion and garlic and fry for 3-4 minutes until softened.
- Add the aubergine, soy sauce, honey, and sesame oil to the pan and mix until everything is combined.
- Serve with rice or quinoa and enjoy!
